Halusky Casserole
Halusky is a varied, traditional Slavic dish, typically prepared with noodles or dumplings. American recipes commonly add cabbage, as we have here. We also added a tomato sauce and treated it as a casserole…as any proper Southerner would. This is savory, filling and gives you plenty of leftovers for the next day. Plus, it costs, pennies per serving. Great for families on a budget.

Serves 8 or more
Ingredients:
½ Head Cabbage
1 Medium Yellow Onion
8 oz Egg Noodles
1 24 oz Can of your favorite Spaghetti Sauce
Finely Shredded Parmesan Cheese
Salt & Pepper
Garlic Powder
Butter or Olive Oil
Start water boiling for egg noodles. Salt liberally.
Slice cabbage into fine ribbons. Put in large microwave safe bowl and cook on high for about 10 minutes, or until semi-tender. (You can skip this step if you prefer your cabbage, crunchy.)
Start egg noodles boiling.
Dice the onion and put it on a large saucepan with several pats of butter, salt and garlic powder. Sautee for 2-3 minutes or until translucent.
Add cabbage to onions and continue to sauté for several minutes more. Then add entire can of spaghetti sauce. Continue simmering for another several minutes or until noodles are done.
Once everything is done, drain noodles, then put back in pot. Add cabbage mixture and mix well. Add to a 10X13 (or so) baking dish. Add Parmesan Cheese to top and bake for 15 minutes at 350 degrees F.
