Pear Preserves

Pear Preserves 

Prep Time: 30 minutes 

Cook Time: 2 hours 


About 20 Medium Sized Pears (aprox 10 Cups, cut and peeled) 

2 1/3 Cups Sugar 

1 ½ Cups Water 

2 tsp Lemon Juice (fresh or bottled) 

Wash, peel and rough chop pears. Combine all ingredients in a large stainless steel pot. 

Bring to a boil, then reduce to a low boil and let cook until reduced to a thick, deep brown, syrupy consistency. Probably cook nearly 2 hours. 

Carefully ladle into sterilized jars, leaving ¼ inch headspace. 

Makes about 3-4 half pint jars. (Process in a water bath for 15 minutes to preserve or store in the fridge for up to 3 weeks.)
