Pear Relish

Pear Relish

About 30 Medium Sized Pears 

6 Yellow Onions 

2 Green Bell Peppers 

3 Red Bell Peppers 

4 Jalapeño Peppers (optional, for a hotter relish) 

5 Cups Apple Cider Vinegar 

2 Lbs Sugar 

1 Tbsp Salt 

1 Tbsp Allspice Berries (tied in a cheesecloth bundle) 

Combine Apple Cider Vinegar, Sugar, Salt and Allspice bundle in a large stainless steel pot. Bring to a boil. 

Peel and chop pears into a salt water bath (to prevent browning), chop onions, deseed and chop bell peppers. Chop all, finely (about 15 seconds on high) in a food processor, then add to Vinegar solution. Bring back to a boil for at least 30 minutes. 

Makes about 12 pint jars. (Process in a water bath for 25 minutes to preserve or store in the fridge for up to 3 weeks.)
